The fifth and final Care’s Chef Under 30 event of 2019 at Ristorante Torre features the self-taught Singaporean chef Lennard Yeong, who for over ten years has dedicated his life to cooking, with a particular interest in the science of food. Since 2018 he has been the in-house chef at Miele in Singapore, where he runs cookery courses and develops new recipes; he also fronts a series of documentaries entitled For Food’s Sake! investigating the reasons for the food supply difficulties in Singapore, a country that imports 90% of the produce it consumes. He is bringing a combination of Asian flavours and seasonal ingredients to Torre, creating a menu of ethical and sustainable recipes inspired by his travels around Asia – unique dishes such as laksa, a spicy pork soup based on a Korean recipe, and the umani-laden seasoning kombu, with a touch of Italian inspiration.
