Vusumuzi Ndlovu, Head Chef at The Marabi Club in Johannesburg, is the third chef in the 2019 CARE’S Chef Under 30 project. Named in the top seven, and the best chef in Africa and the Middle East, at the San Pellegrino Best Young Chef 2018 awards, Ndlovu has an original philosophy in his cooking, which puts the spotlight on simple yet meticulously chosen, high-quality ingredients, particularly vegetables like cabbage and broccoli. He favours vegetables with good levels of acidity, and ferments and cooks them in ways that preserve their integrity. In the five dishes Vusumuzi Ndlovu has created for Torre, everything revolves around purity.
