Torre restaurant has once again launched its ‘CARE’s Chef under 30’ project, the brainchild of three Michelin-starred chef Norbert Niederkofler and Paolo Ferretti that aims to promote “ideas-based cuisine”. Like last year, from March to November, five chefs aged under 30 from all over the world will, for a period of two weeks each, take turns to create a four-course menu inspired by the culinary identity of their country of origin.
The project kicked off with Aldo Yaranga, chef at the restaurant “La Niña” in Miraflores – Lima, Peru – that puts his passion for Peruvian tradition in his dishes and develops an ethical vision tied to using seasonal ingredients and working in partnership with farmers and fishermen from the region.
