Aleksander Yourz, the chef at the Bernardazzi restaurant in Odessa (Ukraine), is bringing a tasting menu comprising the five dishes that best represent his culinary identity to the CARE’S Chef Under 30 project. Traditional flavours and recipes have been reworked to usher traditional Ukrainian cuisine into a cosmopolitan setting, through new and unusual pairings of carefully selected local ingredients.
